Morels are FANTASTIC. If you haven't tried them, you're missing it. They are hard to find, but well worth the hunt. Found in the spring usually the end or March to end of April in the Southern Indiana area. Cut them in half and soak them in salt water overnight. Then they are ready to cook and eat! I like mine dipped in egg batter, then dropped in whole wheat crackers with ground pepper and a lot of cajun seasoning. Then fry them up in oil. Wow. My mouth is watering already.
